摘要:
Abstract: The maturity of tobacco leaves plays a decisive role in tobacco production, affecting the quality of the leaves and production control. Traditional recognition of tobacco leaf maturity primarily relies on manual observation and judgment, which is not only inefficient but also susceptible to subjective interference. Particularly in complex field environments, there is limited research on in situ field maturity recognition of tobacco leaves, making maturity recognition a significant challenge. In response to this problem, this study proposed a MobileNetV1 model combined with a Feature Pyramid Network (FPN) and attention mechanism for in situ field maturity recognition of tobacco leaves. By introducing the FPN structure, the model fully exploits multi-scale features and, in combination with Spatial Attention and SE attention mechanisms, further enhances the expression ability of feature map channel features. The experimental results show that this model, with a size of 13.7 M and FPS of 128.12, performed outstandingly well on the task of field maturity recognition of tobacco leaves, achieving an accuracy of 96.3%, superior to classical models such as VGG16, VGG19, ResNet50, and EfficientNetB0, while maintaining excellent computational efficiency and small memory footprint. Experiments were conducted involving noise perturbations, changes in environmental brightness, and occlusions to validate the model’s robustness in dealing with the complex environments that may be encountered in actual applications. Finally, the Score-CAM algorithm was used for result visualization. Heatmaps showed that the vein and color variations of the leaves provide key feature information for maturity recognition. This indirectly validates the importance of leaf texture and color features in maturity recognition and, to some extent, enhances the credibility of the model. The model proposed in this study maintains high performance while having low storage requirements and computational complexity, making it significant for in situ field maturity recognition of tobacco leaves. 菜籽油是我国主要食用油之一,富含油酸、亚油酸、维生素E、植物甾醇、胡萝卜素和菜籽多酚等功能性物质,营养价值高,因其独特的风味备受欢迎,但不同的加工技术对菜籽油品质具有较大影响。本文综述了国内外常用的菜籽油加工技术研究进展,着重阐述了加工技术对菜籽油品质的影响机制,旨在为进一步优化菜籽油加工技术,提高油品质量和促进菜籽油的适度加工提供一定的参考。

摘要:
本文以黄金茶2号为研究对象,采用顶空固相微萃取与气相色谱-质谱联用技术(headspace solid-phase micro extraction/gas chromatography-mass spectrometry, HS-SPME/GC-MS),建立不同等级黄金茶香气成分GC-MS指纹图谱,并通过化学计量法对两个等级的黄金茶进行判别分析。研究表明,2个等级的黄金茶中鉴定出81种香气组分,其中41种为共有香气组分。基于共有香气组分的正交偏最小二乘方判别分析(orthogonal partial least squares discrimination analysis, OPLS-DA)可以区分2个等级黄金茶,并筛选出9种差异香气组分,分别是庚醛、柠檬烯、反式-β-罗勒烯、1-辛醇、反式-4,8-二甲基-1,3,7-壬三烯、反-橙花叔醇、1,10-Diepicubenol、Epicubenol、十六酸甲酯。以9种差异香气组分为变量建立的线性判别方程对2个等级的黄金茶进行等级判别,自身验证和交叉验证正确率为100%。本文为黄金茶的分级提供了客观量化的参考依据。

摘要:
Milk fat globule membrane (MFGM) proteins have several biological functions and maintain the fat globule structure. However, the major MFGM protein compositions in simulated human milk emulsions are different from those in human milk due to the composition loss in the isolation process of MFGM materials. To overcome this limitation, we developed a novel strategy, namely, the solution enriched with MFGM was homogenized with cream separated from the milk rich in large-sized fat globules. The results of physicochemical properties and the interfacial protein coverage of the emulsions showed that the emulsions prepared by the new method had a smaller particle size, higher stability, and more interfacial protein coverage when the ratio of fat to protein was 1:3. In addition, proteome differences in interfacial proteins between the new emulsions and simulated infant formula emulsions were investigated, and the results revealed that the interface of the emulsions prepared by the new method contained all major MFGM proteins and unique GO annotations and KEGG pathways. However, only four MFGM proteins (XO, ADPH, PAS 6/7) were quantified at the interface of the emulsions prepared by the common method. Furthermore, the protein number and the total relative abundance of major MFGM proteins were approximately 2-fold and 475-fold higher at the interface of the emulsions prepared by the new method compared to the common method. Overall, the study modulated the interfacial protein composition of fat globules by screening the sources of lipid and homogenization methods and revealed its potential effect on processing stability and biological properties.

BACKGROUND: Incorporation of polysaccharide-based nanofillers is an effective strategy to fabricate bio-nanocomposite films with preferable mechanical, barrier, and surface hydrophobicity properties compared to pure biopolymer films. The objective of this research is to investigate the influence of starch nanocrystals obtained from native (NSNC) and waxy rice starch (WSNC) on the physical-chemical properties of pullulan-based nanocomposite films and their preservation performance on fresh beef. RESULTS: Continuous SNCs network structure was observed for pullulan-10% SNCs nanocomposite films, whereas the percolation network of SNCs was destroyed and became no longer continuous with increasing SNCs concentration up to 20% in pullulan films. Among the tested films, pullulan-10% SNCs films showed the highest TS values, lowest WVP and OTR values, due to the formation of percolating SNCs network in pullulan matrix. It is noteworthy that the WVP and OTR values of pullulan-10% WSNC films were significantly lower than that of pullulan-10% NSNC films, probably due to higher hydrophobicity and crystallinity of WSNC compared with NSNC. Beef pieces coated with pullulan-SNCs films had higher L(*) and a(*) values, lower TVB-N, TBARS, and TVC values during 7 days' storage at 4 °C compared with samples coated with pullulan films. CONCLUSION: Pullulan-SNCs nanocomposite films, especially pullulan-WSNC films, could be potentially used as a coating material for fresh beef due to their desirable oxygen and water barrier properties. © 2022 Society of Chemical Industry.

摘要:
植物源性食品基质复杂、农药种类繁多、农药残留限量标准严格,因此建立植物源性食品中多农药残留高通量快速检测技术十分重要。气相色谱-质谱联用(GC-MS)技术是多农药残留高通量检测领域应用最为广泛的一种技术。然而现阶段植物源性食品中多农药残留GC-MS高通量检测仍存在问题。国内外科研工作者对其进行了大量研究,在现有设备的基础上开发前处理新技术以及复杂信号高通量解析新算法是提高该检测水平的关键。该文对近年来国内外发展的基于GC-MS的植物源性食品中多农药残留高通量快速检测技术及相关文献进行了归纳和总结,重点从适合于不同种类农药提取的新型样品前处理技术、基于“数学分离”的复杂信号高通量解析新算法等方面阐述了植物源性食品中多农药残留高通量快速检测的最新进展,并对其存在的问题提出了相关建议,旨在为食品多农药残留高通量快速检测提供参考。

摘要:
Abstract: Extracting ursolic acid (UA) from plant resources using organic solvents is incompatible with food applications. To address this, in this study, 15 edible hydrophobic deep eutectic solvents (HDESs) were prepared to extract UA from apple peel, the extraction conditions were optimized, and the optimization strategies were compared. It was found that the solubility of UA in the HDESs can be 9 times higher than the traditional solvent such as ethanol. The response surface optimization concluded that temperature had the greatest effect on the extraction and the optimized test conditions obtained as follows: temperature of 49 °C, time of 32 min, solid–liquid ratio of 1:16.5 g/mL, respectively. Comparing the response surface methodology (RSM) and artificial neural networks (ANN), it was concluded that ANN has more accurate prediction ability than RSM. Overall, the HDESs are more effective and environmentally friendly than conventional organic solvents to extract UA. The results of this study will facilitate the further exploration of HDES in various food and pharmaceutical applications. 摘要:
Acteoside, an important phenylethanol glycoside, is the main active component in Osmanthus fragrans flower. Our previous study found that acteoside showed high antiaging effect but its absorption rate was low. We speculated acteoside palliated aging-related cognitive impairment before being absorbed, that was intestinal homeostasis underlie the antiaging effect of acteoside. In this study, acteoside was confirmed to palliate cognitive impairment in D-galactose induced aging mice. Acteoside treatment dramatically reduced oxidative stress, alleviated intestinal inflammation, restored intestinal mucosal barrier, rebuilt gut microbiome structure and upregulated gut microbiome metabolites short-chain fatty acids (SCFAs) and amino acids (AAs). Furthermore, antibiotic treatment revealed that the antiaging ability of acteoside was abolished in microbiota depleted mice, which offered direct evidence for the essential role of gut microbiota in the attenuation of cognitive impairment of acteoside. Together, our study indicated that acteoside palliated cognitive impairment by regulating intestinal homeostasisand acteoside intake might be a promising nutritional intervention in prevention of neurodegenerative diseases. © 2023

Insulin resistance (IR) is fundamental to the development of type 2 diabetes (T2D), and altered mitochondrial function and abnormal lipid distribution are closely associated with IR or T2D. Excess oxidative stress-induced mitochondrial damage leads to an imbalance in redox homeostasis, which is considered the major contributor to the progression of diabetes. A key cellular defense mechanism, namely, the nuclear factor-E2 p45-related factor 2 (Nrf2)-antioxidant response element (ARE) pathway, plays an essential protective role in combating excess oxidative stress. A series of phytochemicals are reported to improve IR and restore mitochondrial function against excess oxidative stress by activating the Nrf2-ARE signaling pathway to maintain cellular reactive oxygen species (ROS) homeostasis. The present review focuses on key knowledge gaps in the Nrf2-ARE system targeted by phytochemicals and its correlation to diabetes both in the in vitro and in vivo models and recent achievements in human clinical trials to evaluate its efficiency and safety. In addition, we provide an overview of recent research progress in nutrigenomics, precision nutrition and the interactions occurring in gut microbiota associated with the Nrf2-ARE signaling pathway and diabetes chemoprevention by phytochemicals and finally propose a future research strategy for regulating redox and microbiota balance via the Nrf2-ARE pathway. The present review aims to help us comprehensively understand the critical chemopreventive role of the Nrf2-ARE pathway targeted by phytochemicals in diabetes.

摘要:
目的 建立一种固相萃取-高效液相色谱法测定花生中白藜芦醇含量的分析方法。方法 样品用85%乙醇提取,用氨丙基SiO2微球材料填充固相萃取净化小柱富集,乙醇作为淋洗溶液,吹干后用0.2 mL甲醇定容检测。采用C18色谱柱,以乙腈和水为流动相等度洗脱分离,检测波长为306nm检测。结果 该方法在0.1~10.0μg/g的范围内,白藜芦醇线性关系良好(r~2>0.999),检出限为0.017μg/g,定量限为0.056μg/g;加标回收率为90.4%~107.2%,相对标准偏差为1.3%~8.4%。运用该方法对30份花生样品检测,其白藜芦醇含量范围在73.24~548.51μg/kg之间。结论 该方法灵敏度高、重复性好、成本低廉,且操作简单、快速,满足花生中白藜芦醇定量分析的要求。

摘要:
目的 对分散泛菌的胞内脱乙酰酶(PantoeadispersaN-acetylglucosaminedeacetylase,Pd-nagA)进行表达条件优化及酶学性质分析。方法 本研究使用聚合酶链式反应(polymerasechainreaction,PCR)技术对分散泛菌全基因组中Pd-nagA基因序列进行全长扩增,将含有Pd-nagA基因的质粒pET-28a(+)转化进入大肠杆菌BL21(DE3)中诱导表达,同时采用单因素实验,优化诱导温度、诱导前菌体生物量、诱导时间以及乳糖类似物异丙基硫代半乳糖苷(isopropylβ-D-1-thiogalactopyranoside,IPTG)的浓度,采用Ni2+-次氮基三乙酸(nitrilotriacetic acid, NTA)进行重组酶的纯化,再对其酶学特性进行测定。结果 以pET-28a(+)质粒作为表达载体,大肠杆菌BL21(DE3)成功表达了可溶形式的Pd-nagA蛋白,分子量约为40kDa。当诱导温度为28℃,诱导前菌液OD600值为1.2, IPTG浓度为0.6 mmol/L,诱导时间为20 h时, Pd-nagA蛋白得到了大量表达。通过薄层层析法分析表明Pd-nagA重组蛋白能够在体外转化N-乙酰氨基葡萄糖生成氨基葡萄糖,Pd-nagA重组蛋白能够在高盐溶液中保持一半的相对酶活性,该酶4℃储存10d的相对活性仍然保持在90%以上,具有良好的储存稳定性,催化N-乙酰氨基葡萄糖生成氨基葡萄糖反应条件简单快捷。结论 本研究成功异源表达了具有催化活性的Pd-nagA酶,并对表达条件进行优化及酶学特性探究,可为工业上单酶催化制备氨基葡萄糖提供一定的理论参考。

摘要:
As a class of bioactive and toxic compounds widely present in foodstuffs, the health effects of dietary exposure to β-carboline heterocyclic amines (HAs) have not been elucidated. Based on our previous research that a typical β-carboline HA (harmane) affects blood glucose metabolism and organ dysfunction, the present study mainly focused on the health effects of dietary exposure to harmane in diabetic Goto-Kakizaki (GK) rats. Twenty-four GK rats were administered daily with harmane (0.1 mg per kg body weight) for eight weeks. A comprehensive evaluation of the health effects of harmane was conducted on serum biochemistry, histopathology, and GC-TOF-MS-based metabolomics. The results showed that harmane exerts non-significant effects on the blood glucose metabolism of GK rats. However, it did cause pathological damage to gastrocnemius nerves and showed adverse effects on brain neurons by significantly activating astrocytes and downregulating brain-derived neurotrophic factor (BDNF), which are potential mechanisms related to the disruption of the normal glutamine-glutamate/γ-aminobutyric acid cycle. Moreover, an increased value of AST and urea, alterations in the amino acid, carbohydrate, purine, pyrimidine, and gut microbiota metabolism as well as the tricarboxylic acid (TCA) cycle could be associated with kidney, liver, and gut dysfunction. Our results suggest that given the role of harmane in nerve injury in GK rats, reducing the production and consumption of β-carboline heterocyclic amines in our daily diets should be considered. © 2023 The Royal Society of Chemistry.

目的:为高效利用洞庭湖特色芦苇食用菌资源,开发食用菌多糖功能性食品.方法:以芦苇食用菌春生田头菇为试验原料,以多糖提取率为指标,采用超声辅助热水提取法进行粗多糖提取,以液料比、超声时间、超声功率、热水浸提温度、热水浸提时间为单因素条件进行试验,依据 Box-Behnken中心组合试验设计建立数学模型,优化春生田头菇粗多糖的提取工艺条件,并考察春生田头菇粗多糖对DPPH 自由基、ABTS自由基的清除能力.结果:结合实际,最佳提取工艺条件为料液比 1 ∶50(g/mL)、超声提取时间 20 min、超声功率 150 W、热水浸提温度 80℃、热水浸提时间 4h.在此工艺条件下,春生田头菇粗多糖提取率为 5.08%.提取的粗多糖对DPPH 自由基和 ABTS 自由基清除率分别为 55.05%,58.47%,半抑制浓度 IC50 为 1.03,0.28 mg/mL.结论:春生田头菇多糖在超声辅助热水提取法最佳工艺参数下,提取得率较高,同时该粗多糖具有一定的体外抗氧化能力.

摘要:
目的:比较蕨菜提取物的抗氧化特性,探究不同活性成分与蕨菜提取物抗氧化能力的相关性。方法:以蕨菜水提物和醇提物为原料,测定了其总黄酮、总酚和可溶性糖的含量,同时测定了蕨菜提取液的DPPH·、ABTS+·、·OH的清除能力和总还原能力。结果:试验浓度0.2~1.0 g/mL范围内,在同浓度下,蕨菜水提液的抗氧化综合评价值均大于蕨菜醇提液,预示蕨菜水提液抗氧化能力大于蕨菜醇提液。蕨菜提取液抗氧化综合评价值与蕨菜提取液中总黄酮含量的相关系数为0.911(P<0.01)、与蕨菜提取液中总酚含量的相关系数为0.730(P<0.05)、与蕨菜提取液中可溶性糖含量的相关系数为-0.456。结论:总黄酮含量、总酚含量和蕨菜提取液的抗氧化能力相关性更强,蕨菜中的黄酮物质与酚类物质在抗氧化方面起到协同作用,其中黄酮类物质对蕨菜提取液的抗氧化性有较多贡献,酚类物质次之。

摘要:
Ursolic acid (UA), a pentacyclic triterpenoid, has gained attentions due to its various health-promoting benefits, but exhibits poor bioavailability. This could be enhanced by changing the food matrix of UA in which it is present. In this study, several UA systems were constructed to investigate the bioaccessibility and bioavailability of UA in combination with in vitro simulated digestion and Caco-2 cell models. The results showed that the bioaccessibility of UA was significantly improved after adding rapeseed oil. Caco-2 cell models showed that the UA-oil blend was more advantageous than UA emulsion in total absorption. The results indicate that the location of UA distribution in oil determines the ease of UA release into the mixed micellar phase. This paper brings a new research idea and basis for the design of improving the bioavailability of hydrophobic compounds. © 2023 Elsevier Ltd

摘要:
【目的】为准确评价高膳食纤维重组米品质。【方法】设计了以碎米为主料,大豆膳食纤维和抗性糊精为辅料的16种高膳食纤维重组米配方,采用双螺杆挤压技术制得重组米后测定其蒸煮品质、色泽特性、质构特性共计11项指标,并用感官评价法进行食用品质评价。通过主成分分析建立高膳食纤维重组米品质评价模型,并用该模型对16种高膳食纤维重组米品质进行评价。【结果】结果表明:16种挤压高膳食纤维重组米各项指标变异系数差异大,各品质指标之间存在不同程度的相关性。由主成分分析可将选取的11项指标归纳为3个主成分,其累计方差贡献率为84.155%。【结论】用高膳食纤维重组米的感官评分对建立的模型进行检验,两者具有很好的一致性,表明所建立的模型可为高膳食纤维重组米品质评价提供科学依据。

韧化处理对大米淀粉性质的影响

摘要:
为韧化处理在大米淀粉改性中的应用提供理论依据,作者以余赤早籼米为原料,在不同温度(50~70℃)和水分质量分数(45%~65%)条件下对大米进行韧化处理,然后提取韧化处理后大米中的淀粉,以未经韧化处理提取的大米淀粉为对照,研究韧化处理对大米淀粉溶解度、膨润力、糊化特性、消化特性和冻融稳定性的影响。研究结果表明:与对照组相比,经韧化处理的大米淀粉溶解度和膨润力降低;峰值黏度、最终黏度、谷值黏度、回生值和衰减值均有所降低,糊化温度升高,不同韧化处理温度对衰减值的影响差异显著;淀粉中RDS(快消化淀粉)质量分数升高,RS(抗性淀粉)质量分数减少,SDS(慢消化淀粉)质量分数随着韧化处理条件的不同而不同,说明韧化处理提高了大米淀粉的消化性,也使大米淀粉冻融稳定性下降。

辣椒素和辣椒水提物的抗氧化特性及对人粪便微生物体外培养特性的影响

为了探究辣椒素和辣椒水提物的抗氧化特性及其对肠道微生物的影响,本研究测定了辣椒水提物的主要营养成分,以辣椒素标品为阳性对照,测定了辣椒水提物的抗氧化活性,并以健康大学生粪便为菌源,采用24 h体外厌氧发酵模式探究其对肠道微生物的影响。结果显示,在微辣(0.028 g/L)到特辣(0.112 g/L)范围内,辣椒水提物对DPPH自由基、超氧阴离子自由基、羟自由基的清除率分别为75.25%、12.87%、19.45%,均低于标准辣椒素。在特辣(0.0924-0.2918 g/L)范围内,辣椒水提物与辣椒素能增加培养体系的短链脂肪酸含量,在培养6 h时,其对乳酸菌、双歧杆菌、梭状芽孢杆菌、肠杆菌和总厌氧菌的生长具有抑制作用,对拟杆菌无明显抑菌效果;培养12 h时,其对肠杆菌的生长具有抑制作用,对其余菌均为促进作用;培养24 h时,其对总厌氧菌、梭状芽孢杆菌、肠杆菌的生长具有抑制作用,对双歧杆菌、乳酸菌、拟杆菌的生长具有促进作用。在培养24 h的发酵体系中益生元指数PI值最大,分别为0.11、0.04;B/E值在培养12 h时最大,分别为1.60、1.61。本研究为辣椒营养价值与保健功能研究提供一定的数据支撑。

摘要:
This study aimed to develop a multifunctional active packaging film for fruit preservation. In detail, a series of gelatin (Gel) composite films were prepared by employing chitosan-ferulic acid-titanium dioxide nanohybrid particles (CFT NPs) as filler into Gel film and then their structural, physical, and functional properties were characterized to determine a nanocomposite film with the optimal performances. The results showed that synthesized CFT NPs posed exceptional performances (UV absorption, antioxidant activity, antibacterial ability, etc). After incorporating into Gel film, CFT-Gel films possessed denser network structure owing to the hydrogen bond connection between Gel and CFT NPs. The addition of CFT NPs significantly (P < 0.05) enhanced mechanical and barrier properties for water vapor, oxygen, and carbon dioxide of nanocomposite films, especially for CFT-Gel film with 0.40 mg/mL of CFT NPs (CFT0.40-Gel). CFT0.40-Gel film also showed enhanced UV shielding (∼100% at 200–400 nm), antioxidant ability (2-fold∼3-fold enhancement), and high relative bacteriostatic rate (>95% against Escherichia coli and Staphylococcus aureus under ultraviolet catalysis due to the generation of reactive oxygen species). Moreover, hemolysis assay proved the good bio-safety of CFT-Gel films. Further, CFT0.40-Gel film was successfully applied in the preservation of non-climacteric fruit (strawberries) and climacteric fruit (bananas), as the evidence of its good preservation ability. Therefore, the multifunctional CFT0.40-Gel film possessed great application prospect in fruit preservation. Meanwhile, this work provided a feasible strategy for designing a multifunctional active food packaging. © 2023 Elsevier Ltd
