　　本实验旨在比较研究草鱼和赤眼鳟杂交子一代(F1)与自交F1肌肉营养特性,评价杂交F1肌肉营养价值；选取18月龄健康F1、草鱼及赤眼鳟各12尾,采用生化方法分析3种鱼背肌中水分、粗脂肪、粗蛋白、灰分、氨基酸和脂肪酸组成,并进行氨基酸营养价值评价；结果表明,杂交F1肌肉中水分含量显著低于草鱼(P＜0.05),显著高于赤眼鳟(P＜0.05)；其粗蛋白含量显著高于草鱼(P＜0.05),但显著低于赤眼鳟(P＜0.05).杂交F1总氨基酸(AA)、必需氨基酸(EAA)和鲜味氨基酸(DAA)含量分别为156.45 mg/g、62.81 mg/g和61.32 mg/g,其AA和DAA含量分别显著高于草鱼(P＜0.05),低于赤眼鳟但不具有显著差异性(P＞0.05).三种鱼肌肉...
