　对影响酸乳EPS提取的乙醇体积分数、提取时间、乙醇与溶液体积比三因素，运用Box—Behnken设计进行优化，确定主要因素的最佳条件。优化的结果为：在乙醇体积分数为82％，提取时间7．5h，酒精与溶液体积比1．1：1时酸乳EPS提取吸光度最大，达到0．182。
