怀化市拥有丰富的刺葡萄资源,试验选用6个品种进行酿酒试验.几种刺葡萄(Vitis davidii Foex)含糖量在12.3%～15.9%之间,其中米刺葡萄的含糖量最高,达到15.9%.通过酿酒试验,在加入相同比例蔗糖的情况下,米刺葡萄酒酒精度最高,色度、干浸出物也较高.此外,在调查过程中还发现了一种白刺葡萄类型,为酿造白葡萄酒的宝贵资源.总之,通过加糖、改进工艺等措施,可以酿造出优质的刺葡萄酒,其中以米刺葡萄酿制的葡萄酒品质最为优良.
