菜籽多肽是由菜籽蛋白水解得到的一种多肽,具有独特的理化特性与生物学活性。本文根据国内外的研究对菜籽多肽的制备、分离和纯化工艺进行了介绍,并借鉴了其他多肽类物质的应用来论述菜籽多肽的应用。随着人们健康意识的增强,菜籽多肽的应用发展前景将更为广阔。
