In this paper, a new method eliminating capsaicinoids from pepper pigment was studied by using adsorption resin column chromatography. Red colour and Yellow cnlour composition without capsaicinoids were obtained and the value of Red colour composition get to 105. Pigment ingredient could be separated finely by using Si-gel column chromatography . Several Red colnur with the maximum adsorption wavelength 470 nm and Yellow colnur with the maximum adsorption wavelength 450 nm in uv-vis spectra were obtained.
