分析了同一环境条件下,正季收获的59个早籼品种（组合）糙米的17种氨基酸含量和蛋白质含量,结果表明:糙米中8种必需氨基酸与9种非必需氨基酸的绝对含量与相对含量,品种（组合）间存在明显差异;各品种氨基酸的绝对含量都与其蛋白质含量呈正相关;各氨基酸绝对含量的品种间变幅与变异系数均大于其相对含量的变幅与变异系数;糙米蛋白质质量也存在明显的品种间差异,赖氨酸是水稻的第一限制性氨基酸,少数水稻品种缺乏苏氨酸、胱氨酸、蛋氨酸、异亮氨酸等氨基酸;水稻蛋白质中各种氨基酸相对含量和平均值与其对应的遗传密码数达到显著水平的正相关。

Fifty nine rice varieties (combinations) harvested from the same environmentconditions durimg the normal season were analysed on the 17 amino acids in Hitachi 835-50type Auto-Amino Acid Analyser and were analysed on their protein contents by Kjeldahlmethod.
