冠突散囊菌是茯砖茶在特定的温湿度条件下，通过“发花”工艺生长的自然益生菌体。文章主要综述了冠突散囊菌的特性及其改善茶叶的品质、抗氧化、抑菌、提高酶活性、调节维持肠道菌群平衡的营养作用。
