Mulberry leaves contain various bioactive constituents and are widely used as traditional medicine and food in Asia. In this study, mulberry leaves were processed by solid-state fermentation (SSF) using a mixture microbial of Lactobacillus plantarum, Candida utilis, Trichoderma koningii, and Bacillus cereus.
