Analysis and Evaluation of the Nutritional Components in the Soft Part of Corbicula fluminea in Datong Lake

对大通湖河蚬软体部分营养成分进行分析与评价,为其资源开发利用提供基础信息.结果显示,大通湖河蚬含肉率为(13.01±0.001)％,软体部分含水量为(90.58±0.01)％,干物质中粗蛋白、粗脂肪和粗灰分含量分别为(65.92 ±0.27)％、(15.86±0.02)％和(4.15±0.03)％.所检测的17种氨基酸中,必需氨基酸7种,占总氨基酸含量的34.82％；半必需氨基酸2种,占4.19％；4种呈味氨基酸占39.87％,鲜味氨基酸谷氨酸和天冬氨酸是含量最高的2种氨基酸.苏氨酸的氨基酸评分和化学评分均最高,分别为120和103分,而半胱氨酸+蛋氨酸均最低,分别为88和50分.大通湖河蚬软体部分呈现高蛋白低脂肪特征,富含鲜味氨基酸,半胱氨酸+蛋...

Datong Lake is the largest lake for aquaculture in Hunan province, which is rich in natural resource of Corbicula fluminea. The present study analyzed and evaluated the nutritional components in the soft part of C. flu- minea in Datong Lake, the results of which will provide useful information in the proper development and utilization of C. fluminea resource.
