Cold chain systems are essential for preserving the quality and nutritional value of kiwifruit and other fruits, as well as facilitating their transportation and supply. Cold chain breaks can adversely affect fruit quality and value. Therefore, exploring its metabolism and molecular basis research is of great significance for regulating cold chain breaks.
