The effects of different conditions,such as pH,carbohydrates,preservatives,oxidant,reducer and metallic ions on the stability of red pigment in the wild Zingiber strioatum from Wulin Mountains were discussed.The results showed that the red pigment was sensitive to pH.Acidic conditions are conducive to the pigment stability.The potassium sorbate and the sodium benzoate in carbohydrates and preservatives had no bad effects on the pigment stability.The pigment showed hyperchromicity to the ascorbic acid,there were no significant influences on ligh...
