Mesoporous materials/gold nanoparticles/hemoglobin (CMK-Au-Hb) modified electrode was used to rapidly detect acrylamide (AA) in food. The modified electrode of mesoporous material sensitive membrane was prepared by reagent dispersion and drop coating.
