浅议生猪屠宰检疫、检测和检验三者关系

摘要:
近几年来,河南“瘦肉精”、广州“口蹄疫”等动物疫病及药物残留中毒事件时有发生,存在肉食品安全隐患,一旦发生,会造成很大的社会影响.因此,生猪屠宰检疫、药残检测、肉品检验在把好生猪肉品上市的关键一环.下面,笔者结合在东莞实际工作情况,谈谈生猪屠宰检疫、药残检测和肉品检验这三者的关系.

十八届三中全会明确提出:“健全公共安全体系.完善统一权威的食品药品安全监管机构,建立最严格的覆盖全过程的监管制度,建立食品原产地可追溯制度和质量标识制度,保障食品药品安全.”

反刍家畜瘤胃内碳水化合物和氨基酸的降解生成挥发性脂肪酸(Volatile fatty acids)伴随着还原当量(educing equivalents)的产生。瘤胃内还原当量包括NADP-H、FADH2、NADH等,而通常用氢(H)来表示。每生成1 mol乙酸和丁酸伴随生成4 mol氢,而每生成1 mol丙酸和戊酸伴随消耗2 mol氢。剩余氢在氢气生成微生物作用下生成氢气,氢气则为甲烷菌生长提供

摘要:
Trypsin-like serine protease (TLS) is ubiquitous in animals and plays a number of diverse roles, including dietary protein digestion, hemolymph coagulation, antimicrobial activity and immune responses, among others. This study reports the isolation of a 1048bp full-length cDNA sequence of TLS from triangle-shell pearl mussel (Hyriopsis cumingii), including a 12bp 5' UTR (untranslated region), a 172bp 3' UTR, and an open reading frame (ORF) of 864 bp by rapid amplification of cDNA ends (RACE). Bioinformatic analysis shows that the gene belongs to the trypsin-like serine protease superfamily, and contains a 15 residues N-terminal signal peptide and a conserved C-terminal domain. In comparison to other serine proteases, the catalytic triad were identified as His-98, Asp-149, and Ser-240. Quantitative real-time PCR (qPCR) showed a broad expression of the TLS gene in ten tested tissues. Time-course expression analysis demonstrated that the expression level of the TLS mRNA was significantly up-regulated in eight tested tissues (liver, intestine, gill, heart, axe foot, adductor muscle, kidney and gonad), but down-regulated in mantle and stomach after Aeromonas hydrophi l a injection. This is one of the results indicate that TLS may be involved in innate defense reactions against A.hydrophila in triangle-shell pearl mussel. © 2014 Elsevier Ltd.

近年来我国生猪养殖集约化程度日益提高,养猪生产的环境污染问题日益突出,新型环保猪饲料的研发与推广成为我国饲料工业的重要发展方向。本文旨在阐述生猪养殖中氮磷污染现状,根据氮磷元素在猪体内的代谢原理,探讨通过改变饲料配制方式达到从源头减少氮磷污染物排放的目的。其主要措施是通过氨基酸平衡配制饲粮和开发应用加酶饲粮。

摘要:
A 10-week feeding experiment was conducted to evaluate the effects of dietary protein to lipid ratios (P/L) on growth, intestinal digestive enzyme activities and body composition in juvenile rice field eel (Monopterus albus) (initial mean body weight of 65.76 ± 1.07 g, mean ± SEM). Nine test diets were formulated in a 3 × 3 factorial design to contain three protein levels (350, 400 and 450 g kg-1) for each of three lipid levels (40, 80 and 120 g kg-1), respectively. Each diet was randomly assigned to triplicate groups of 60 fish per net cage (1.5 × 2.0 × 1.5 m). Results showed the survival was above 96 % and was not affected by dietary treatments. Fish fed the diet with 450 g kg-1 protein and 40 g kg-1 lipid showed the best weight gain (WG) (103.95 %) and feed conversion ratio (1.60) (P < 0.05). WG, protein efficiency ratio and energy retention increased with the increasing in lipid at 350 g kg-1 protein level (P < 0.05). However, WG showed a little decline with increasing dietary lipid when fish fed the diets with 400 and 450 g kg-1 protein level, but no significant difference was observed (P < 0.05). Hepatosomatic index, visceralsomatic index and intestinal lipase activity increased with the increasing of dietary lipid level irrespective protein level. Intestinal trypsin activity increased with the increasing of dietary lipid level when fish fed the diets with 350 g kg-1 protein, but showed converse trend when fish fed the diets with 400 and 450 g kg-1 protein. Serum triglyceride, body lipid and energy were positively correlated with the dietary lipid. Results of the present study showed that the dietary protein/lipid ratio of 450/40 g kg-1 is considered optimum for rice field eel under culture conditions, and the increase in dietary lipid level has no efficient protein-sparing effect when fish fed the diets with 400 and 450 g kg-1 protein level. © 2013 Springer Science+Business Media Dordrecht.

(鮰)爱德华氏菌(Edwardsiella ictaluri)是水生动物的一种常见高死亡率的致病菌,其分类地位为变形菌门、γ-变形菌纲、肠杆菌目、肠杆菌科、爱德华氏菌属.该致病菌对云斑(鮰)、蓝色弓背鱼、斑马鱼、虹鳟、黄颡鱼、日本鳗鲡、南方鲇都有致病性,对斑点叉尾(鮰)可引起斑点叉尾(鮰)肠道败血症.被(鮰)爱德华氏菌感染的斑点叉尾(鮰)食欲不振、甚至禁食,因而抗生素药物对于斑点叉尾(鮰)肠败血症的治疗效果不显著,每年斑点叉尾(鮰)大面积死亡给全球斑点叉尾(鮰)产业带来巨大的经济损失.我们就目前国内外有关(鮰)爱德华氏菌的研究现状从生物学特性、感染症状、致病机理及毒力因子、预防与治疗措施等方面进行回顾和总结,为预防与治疗(鮰)爱德华氏菌病提供一定的理论依据.

摘要:
This experiment was conducted to investigate the effects of oral administration of monosodium glutamate (MSG) on expression of genes for hepatic lipid and nitrogen metabolism in piglets. A total of 24 newborn pigs were assigned randomly into one of four treatments (n = 6/group). The doses of oral MSG administration, given at 8:00 and 18:00 to sow-reared piglets between 0 and 21 days of age, were 0 (control), 0.06 (low dose), 0.5 (intermediate dose), and 1 (high dose) g/kg body weight/day. At the end of the 3-week treatment, serum concentrations of total protein and high-density lipoprotein cholesterol in the intermediate dose group were elevated than those in the control group (P < 0.05). Hepatic mRNA levels for fatty acid synthase, acetyl-coA carboxylase, insulin-like growth factor-1, glutamate-oxaloacetate transaminase, and glutamate-pyruvate transaminase were higher in the middle-dose group (P < 0.05), compared with the control group. MSG administration did not affect hepatic mRNA levels for hormone-sensitive lipase or carnitine palmitoyl transferase-1. We conclude that oral MSG administration alters hepatic expression of certain genes for lipid and nitrogen metabolism in suckling piglets. © 2013 Springer-Verlag Wien.

摘要:
The objective of the present study was to investigate the optimal dietary n-6:n-3 PUFA ratios that regulate lipid metabolism and inflammation in pigs. A total of ninety-six cross-bred (Large White × Landrace) growing-finishing pigs (73·8 (sem 1·6) kg) were chosen and fed one of the four isoenergetic diets with n-6:n-3 PUFA ratios of 1:1, 2·5:1, 5:1 and 10:1. The growth performance of pigs fed the diet with an n-6:n-3 PUFA ratio of 5:1 was the best, but the group fed the diet with an n-6:n-3 PUFA ratio of 1:1 had the highest muscle mass and the lowest adipose tissue mass (P< 0·05). The concentrations of IL-6 and IL-1β of pigs fed the diet with an n-6:n-3 PUFA ratio of 1:1 were decreased compared with those of the other groups (P< 0·05). The concentration of adiponectin of pigs fed the diet with an n-6:n-3 PUFA ratio of 1:1 was also markedly decreased, but the concentration of leptin was increased compared with that of the groups fed the diets with n-6:n-3 PUFA ratios of 5:1 and 10:1 (P< 0·05). Additionally, the optimal dietary ratios of n-6:n-3 PUFA of 1:1 and 5:1 markedly suppressed the expression levels of lipid metabolism-related genes and proteins such as phosphoinositide-3-kinase-α, fatty acid transport protein-1 and PPARγ. They also significantly suppressed the expression levels of the inflammatory cytokines IL-1β, TNF-α and IL-6. The results indicated that the optimal n-6:n-3 PUFA ratios of 1:1 and 5:1 exerted beneficial effects on lipid metabolism and inflammatory system, leading to the availability of more energy and nutrients for high performance and homeostatic pathways. © 2013 The Authors.

摘要:
硒(selenium)是动物必需的微量元素,它参与动物生命维持、生长、繁殖、免疫等生理代谢。人们日常饮食中的硒含量低于人体的正常需要,研究表明,如果提高动物产品的硒含量,不仅可改善动物的健康状况,还能提高动物产品(肉、乳和蛋品等)的价值。但当前饲料中普遍使用的硒源亚硒酸钠存在吸收率低、过氧化作用及潜在的污染等问题。酵母硒(selenium yeast,SY)与纳米硒(nano-selenium,nano-Se)是当前开发的优质有机硒源,酵母硒中的有机硒易被机体利用,并可以通过Na+依赖性氨基酸途径被主动地吸收,吸收率高,并且营养丰富;而纳米硒具有特有的纳米颗粒性,其吸收率高、生物活性高、安全性高。两者在家禽生产上已取得了一定效果,但在鹌鹑生产中的应用效果及其比较还未见报道。本试验在鹌鹑日粮中添加不同水平酵母硒和纳米硒探讨二者对鹌鹑肉与蛋中硒含量、血清生化指标的影响,为高效、安全硒源研究与应用提供实验依据。

摘要:
This study investigated the effects of dietary resveratrol at 0, 200, 400, or 600 mg/kg of diet on the performance, immune organ growth index, serum parameters, and expression levels of heat shock protein (Hsp) 27, Hsp70, and Hsp90 mRNA in the bursa of Fabricius, thymus, and spleen of 42-d-old female blackboned chickens exposed to heat stress at 37 ± 2°C for 15 d. The results showed that heat stress reduced daily feed intake and BW gain; decreased serum glutathione (GSH), growth hormone, and insulin-like growth factor- 1 levels; and inhibited GSH peroxidase (GSH-Px), superoxide dismutase (SoD), and catalase (CAT) activities compared with birds subjected to thermo-neutral circumstances. Chickens that were fed diets supplemented with resveratrol exhibited a linear increase in feed intake and BW gain (P < 0.001); serum GSH, growth hormone, and insulin-like growth factor-1 levels (P ≤ 0.01); and GSH-Px, SoD, and CAT activities (P < 0.001) compared with chickens that were fed diets without resveratrol during heat stress. In contrast, serum malonaldehyde concentrations were decreased (P < 0.001) in the chickens fed a resveratrol-supplemented diet. Heat stress also reduced (P < 0.05) the growth index of the bursa of Fabricus and spleen; however, it had no effect on the growth index of the thymus. The growth index of the bursa of Fabricius and spleen increased (P < 0.05) upon heat stress and coincided with an increase in supplemental resveratrol levels. The expression of Hsp27, Hsp70, and Hsp90 mRNA in the bursa of Fabricius and spleen were increased (P < 0.01), but those of Hsp27 and Hsp90 mRNA in thymus were decreased (P < 0.01) under heat stress compared with no heat stress. Resveratrol attenuated the heat stress-induced overexpression of Hsp27, Hsp70, and Hsp90 mRNA in the bursa of Fabricius and spleen and increased the low expression of Hsp27 and Hsp90 mRNA in thymus upon heat stress. The results suggest that supplemental resveratrol improves growth performance and reduces oxidative stress in heat-stressed black-boned chickens by increasing serum growth hormone concentrations and modulating the expression of heat shock genes in organs of the immune system. © 2014 Poultry Science Association Inc.

摘要:
The aim of this study was to investigate whether supplementation with chitosan (COS) could reduce diarrhea and to explore how COS alleviates intestinal inflammation in weaned pigs. Thirty pigs (Duroc×Landrace×Yorkshire, initial BW of 5.65±0.27) weaned at age 21 d were challenged with enterotoxigenic Escherichia coli during a preliminary trial period, and then divided into three treatment groups. Pigs in individual pens were fed a corn-soybean meal diet, that contained either 0 (control), 50 mg/kg chlortetracycline, or 300 mg/kg COS for 21 days. The post-weaning diarrhea frequency, calprotectin levels and TLR4 protein expression were decreased (P<0.05) in both the COS and chlortetracycline groups compared with control. Simultaneously, supplemental COS and chlortetracycline had no effect on the mRNA expression of TNF-α in the jejunal mucosa, or on the concentrations of IL-1β, IL-6 and TNF-α in serum. However, COS supplementation improved (P<0.05) the mRNA expression of IL-1β and IL-6 in the jejunal mucosa. The results indicate that supplementation with COS at 300 mg/kg was effective for alleviating intestinal inflammation and enhancing the cell-mediated immune response. As feed additives, chitosan and chlortetracycline may influence different mechanisms for alleviating inflammation in piglets.

A set of 17 polymorphic microsatellite markers were isolated and characterized for the Chinese soft-shelled turtle (Pelodiscus sinensis) using a next generation sequencing approach. The number of alleles per locus ranged from 2 to 11. The observed, expected heterozygosities and polymorphic information content per locus varied from 0.103 to 0.750, 0.222 to 0.883 and 0.158 to 0.788, respectively. Significant linkage disequilibrium and deviations from the Hardy–Weinberg disequilibrium between two pairs of loci were found. These loci will be beneficial for the population genetic structure investigation and marker assisted breeding for P. sinensis. © 2014, Springer Science+Business Media Dordrecht.

The objective of this study was to assess the effect of orally administered Escherichia coli Nissle 1917 (EcN) on the jejunal health of weaned piglets that were unchallenged or challenged with porcine enterotoxigenic E. coli Abbottstown (EcA). A total of 40 weaned Landrace x Yorkshire piglets (5.83 +/- 0.24 kg) were allocated to 4 groups with 10 barrows per group, following a 2 x 2 factorial design with 2 inclusion levels of EcN (daily oral administration of 2 mL sterile water or 2 mL EcN (10(9) cells/mL)) at 10:00 h) and 2 inclusion levels of EcA (daily oral administration of 2 mL sterile water or 2 mL EcA (10(9) cells/mL) at 14:00 h). Thus, there were four treatments: (1) control diet (C); (2) C + EcN (N); (3) C + EcA (A); (4) C + EcN + EcA (N+ A). This experiment lasted for 21 d. The results indicated a significant interaction between EcN and EcA on growth performance and jejuna( mucosa( membrane integrity, morphology, immune parameters and the antioxidant capacity in 21-day-weaned piglets (P<0.05). The results that piglets in the A group had lowest feed conversion, daily weight gain, daily feed intake, jejunal villus height (P<0.05) among the 4 groups suggested that the oral administration of EcA decreased growth performance. The results that piglets in the A group had lowest mRNA levels of regenerating islet derived protein 3 gamma and transforming growth factor beta 1 (P<0.05), lowest protein levels of claudin-1, occludin, and zonula occludens-1 (P<0.05) and highest serum D-lactate concentration (P<0.05) among the 4 groups suggested that the oral administration of EcA damaged jejunal mucosal membrane integrity. The immune and antioxdant parameters results that orally administered EcA increased mRNA levels of interleukin (IL)-1 beta, IL-8, tumor necrosis factor (TNF)-alpha, and toll-like receptor (TLR)-4 (P<0.05), increased the concentrations of IgM, IgG, IL-1 beta, TNF-alpha, sIgA (P<0.05), and TLR-4, and decreased activities of superoxide dismutase and total antioxidant (P<0.05) suggested that EcA could make the jejunal mucosal membrane inflamed in early weaned piglets. Orally administered EcN tended to improved growth performance, jejunal villus height, the immune and antioxdant function, jejunal mucosal membrane integrity in piglet unchallenged or challenged with EcA. This improvement of the jejunal health and growth performance of piglets challenged with EcA by oral administration of EcN could be attributed to increased defense against harmful bacteria and improved epithelial barrier function. These results demonstrated that EcN could be used in early-weaned piglets to prevent intestinal infection by the pathogenic bacteria EcA. (C) 2014 Published by Elsevier B.V.
